Calling something a food journal rather than a cookbook is a small distinction that turns out to matter. Bestow Within reads as a record of how one person came to eat the way she does, with the recipes arriving as part of that story rather than as a list of instructions.

Janine Tait is a New Zealand dermo-nutritionist and the founder of Bestow Beauty, and this first volume sets out the thinking behind the whole Bestow range. Her approach centres on simple whole food combinations, prepared with care and eaten seasonally, and she is interested in the relationship between what we eat and how we feel in our own skin. Co-creator Sheryl Nicholson photographed it, and her images do a lot of the work, giving the book a considered, unhurried quality. Recipes run from mineral-rich sushi rolls through to a raw chocolate mousse torte, so it covers everyday eating and occasions alike.

How is this different from Savour?

Savour is tightly focused on one-dish vegetarian meals. Within is broader and more personal, mixing recipes with the reasoning behind them, and it works well as the entry point to the series. Many people end up with both, since they overlap very little.

Is it a New Zealand book?

How to Use It

Read it rather than only cooking from it, at least at first, since the reasoning is half the value. It suits a kitchen shelf or a bedside table equally, and the soft, floral-toned cover sits well against linen, pale timber and cream ceramics. Because it is a journal as much as a recipe collection, it rewards returning to across a year rather than working through in one go.
